When many people go out to buy baklava, they look for the traditional Greek variety of philo dough folded into triangles and diamond shapes. But there are actually many more ways of creating baklava than that. Any Middle Eastern baker will tell you that bird's nests, mini roses, ballorieh (or ballourie), Burmas, and some types of lady fingers are variations on the same theme.
Baklava is a delicious dessert made with paper-thin sheets of filo dough which have been buttered, layered, and baked (like traditional baklava), or layered and rolled into a log (like lady fingers). Ground and finely chopped walnuts or pistachios are layered between the sheets of pastry, which are baked and soaked in a solution of sugar and either lemon juice or honey, and sometimes sprinkled with rosewater. Some of our variations also use pine nuts or cashews.
In addition to baklava, we also offer mamoul, a traditional Middle Eastern cookie. These are absolutely fantastic treats made with a blend of flour, semolina, and pure butter. Our mamoul can be filled with walnuts, pistachios, or dates. We also have namoura, a mix of semolina, coconuts, rose water, cinnamon, and walnuts soaked with sugar syrup and topped with almonds. Both are absolutely delicious, and can make an excellent addition to the dessert menu for your next dinner party.
All of our desserts can be shipped anywhere in the US. They can be stored at room temperature and will last for two weeks, so even regular ground shipping will get your treats to you in plenty of time to enjoy them fresh. You can refrigerate them to make them last even longer. We do not, however, recommend freezing your desserts, as thawing will leave them soggy, so you should order a quantity that will last you about two to three weeks.
